Lecithin is a phospholipid Рa specialised fat molecule comprising of a complex mixture of glycolipids, sterols, triglycerides, carbohydrates and fatty acids. It is an entirely natural product that occurs abundantly in egg yolks, soya beans, sunflower seeds and the cells of plant seeds. Because lecithin combines with fats and oils as well as with water, it is the ideal emulsifier.
